Red pepper pumpkin lentil soup

Ingredients

  • 2 roasted peppers (approximately 1 cup)
  • 2-3 cups steamed or roasted pumpkin
  • 1 1/4 cups coral lentils or lentils of choice
  • 1 tbsp miso paste
  • 3-4 cups water or stock of choice
  • 1-2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 3/4 cups coconut milk
  • Salt and pepper to taste
  • LSF cumin oil to serve
  • Roasted seeds to serve
  • Fresh herbs
  • Coconut milk to serve

Method

  1. Add the soup ingredients into a large pot, bring to a simmer until the lentils are soft.
  2. Once soft, add to a blender and blend until super smooth.
  3. Serve the soup with roasted seeds, coconut milk, and fresh herbs. Add a drizzle of cumin oiln on top and enjoy!
